Who knew that cauliflower could have so many uses and taste so delicious. The Low Carb lifestyle has really brought cauliflower to the foreground as one of the most used veggies in the kitchen. And this Low Carb Cheesy Cauliflower Bacon Bread recipe is now one of my favourite ways to eat cauliflower. Truth be told, it might have something to do with the cheese and bacon… 😉

Low Carb Cheesy Cauliflower Bacon Bread Recipe

The really wonderful thing about this recipe is that it works for so many occasions. It is always as hit at parties – people are always commenting that its so delicious and they cannot believe it’s actually made from cauliflower. And, adults aren’t the only ones that are fooled – kids love this cheesy bacon bread. Just remember to leave out the word “cauliflower” and you will have them munching on a slice of it without even noticing you’re giving them a portion of veggies.

The low carb cheesy cauliflower bacon bread is also very quick to prepare. I normally make my cauli-rice in my food processor (one of the appliances I cannot live without any more) – but you can also prepare the cauliflower using a normal grater.

You won't even notice that this cheesy bacon bread is made with cauliflower. It's the perfect recipe for party snacks or to fool your kids into eating their veggies!

Ingredients
  1. 1 Large Head of Cauliflower
  2. 1 Large Egg
  3. 1 Cup Mozzarella Cheese
  4. 1 Cup Cheddar Cheese
  5. Salt & Pepper to taste
  6. 1/2 tsp Paprika
  7. 200g Diced Bacon
  8. 5 Sprigs of Fresh Parsley (roughly chopped)
Instructions
  1. Pre-heat oven to 200° C or 395° F.
  2. Rice/ grate the head of cauliflower in a food processor or by using a grater.
  3. Add the riced cauliflower to a large bowl.
  4. Add the large egg and mix into the cauliflower.
  5. Add 1/2 cup mozzarella, 1/2 cup cheddar cheese, salt, pepper and paprika to the cauliflower mixture and stir to combine.
  6. Line a large rectangular baking tray with non-stick baking paper or a silicone mat.
  7. Add the cauliflower mixture to the lined baking tray and press into a large rectangle - press the mixture until it is about 1cm or 0.4inches thick.
  8. Bake the bread in the pre-heated over for 12 minutes.
  9. In the meantime, fry the diced bacon until it is cooked and slightly crispy. (Try not to eat any from the pan - good luck!)
  10. Once the 12 minutes are up, remove the bread from the oven, add the bacon and remaining cheese (1/2 cup mozzarella and 1/2 cup cheddar) on top of the bread, spreading evenly.
  11. Bake your low carb cheesy cauliflower bacon bread for another 10 minutes or until the cheese bubbles and begins to brown.
  12. Leave to cool for about 10 minutes, sprinkle the parsley over the top of the bread, and slice into rectangular pieces.
  13. You can add a dipping sauce if you like, but these cheesy bacon bread pieces are really so good just as is!
